Peach Chicken Picante

Ingredients

  • 1 12-ounce container of yellow peaches in natural juices or lite syrup
  • 3 medium boneless, skinless chicken breasts diced into 2 inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 7-iounce jar of roasted red peppers, diced
  • ½ cup medium heat, thick and chunky salsa
  • 2 tablespoons frozen orange juice concentrate
  • 2 tablespoons chopped cilantro
  • ½ teaspoon crushed red pepper (optional)
  • 2 bags of 90 second microwavable whole grain rice
  • Salt and Pepper

Directions

  1. Drain peaches and reserve all liquid.

  2. Season chicken with salt and pepper. Heat extra virgin olive oil in large skillet over medium heat.

  3. Add chicken, cooking until browned and cooked through. Remove to a paper towel lined plate to drain.

  4. In the same skillet add roasted red pepper and cook for 2 minutes.

  5. Add peach liquid (NOT PEACHES), salsa, frozen orange juice concentrate and crushed red pepper if desired. Bring to a low boil. Stir frequently.

  6. Add peaches and cilantro. Lower heat to low and stir for one minute. Add chicken, toss to coat with sauce and continue to cook for 2 minutes.

  7. Meanwhile cook both packages of brown rice.

  8. Serve chicken and sauce over brown rice. Enjoy!
