Honey Beets

Ingredients

  • 1 tbsp cornstarch
  • ¼ cup honey
  • ½ tsp salt
  • 1 tbsp butter
  • 1 tbsp beet juice
  • 2 cups cooked or slices cooked beets
  • 2 tbsp cider vinegar

Directions

  1. In a small glass bowl, mix cornstarch and salt.

  2. Stir in beet juice (or water).

  3. Microwave on high for 1 minute or until thickened, stirring occasionally.

  4. Add vinegar, honey, and butter.

  5. Place beets in a 1 ½ quart casserole. Pour sauce over beets. Cover and heat on high 1-2 minutes or until heated through.

  6. Do not uncover; let stand for 10 minutes. Reheat 1 minute on high before serving.
